Peanut butter balls half-dipped in semi-sweet chocolate, left open on top so they look like the nut they are named for.
8 steps, about 30 minutes start to finish.
Combine the softened butter, peanut butter, powdered sugar, and vanilla.
Stir or mix until the filling becomes stiff and moldable.
Portion and roll the mixture into balls.
Arrange the balls on wax or parchment paper.
Refrigerate until firm.
Melt the semi-sweet chocolate.
Dip each peanut butter ball partially into the chocolate, leaving a visible circle of peanut butter on top so it resembles an actual buckeye.
Return the dipped Buckeyes to the lined sheet and refrigerate until the chocolate has completely set.
“Chill the balls until firm before dipping or they slump off the fork. Leave that circle of peanut butter showing, the half dip is the whole point of a buckeye.”
