Hugo Spritz

Elderflower liqueur, prosecco and a splash of soda over ice, with mint and lime doing the heavy lifting. Lighter and more floral than an Aperol spritz, and dangerously easy to drink on a warm afternoon.

The preparation

5 steps, about 5 minutes start to finish.

  1. 01

Add mint leaves and lime to a wine glass, give the mint a gentle slap.

  2. 02

    Fill the glass with ice.

  3. 03

Pour in the St-Germain elderflower liqueur.

  4. 04

    Top with prosecco, pour slowly.

  5. 05

Finish with a splash of soda water. Stir gently once.

lightbulb The chef's notes

“Slap the mint gently rather than muddling it, which releases the aroma without the bitterness torn leaves bring. Pour the prosecco in slowly and stir just once so it stays bright and bubbly.”
