The Gold Rush

A modern classic from New York City: bourbon, fresh lemon, and honey syrup shaken hard and strained over one big cube. It drinks like a whiskey sour that traded simple syrup for honey, a little rounder and richer.

The preparation

4 steps, about 5 minutes start to finish.

  1. 01

Make the honey syrup: stir 3 parts honey into 1 part warm water until smooth, then cool.

  2. 02

Shake the bourbon, lemon juice, and honey syrup hard with ice for 12-15 seconds.

  3. 03

Strain over one big ice cube in a rocks glass.

  4. 04

Express a lemon twist over the top if desired.

lightbulb The chef's notes

“Straight honey seizes into a lump in cold spirits, so the syrup step is not optional. One big cube keeps it cold without watering it down.”
