The iconic fairground treat: crispy, lacy fried dough dusted with powdered sugar.
9 steps, about 25 minutes start to finish.
In a large bowl, whisk together flour, baking powder, salt, and sugar.
In a separate bowl, beat together eggs, milk, and vanilla.
Pour the wet ingredients into the dry and whisk until smooth with no lumps.
Heat about 2 inches of vegetable oil in a large heavy skillet or pot to 375°F.
Using a funnel or squeeze bottle, carefully pour batter in a circular, crisscross pattern into the hot oil.
Fry for 2-3 minutes until golden on the bottom, then carefully flip and fry another 1-2 minutes.
Remove with tongs or a slotted spatula and drain on paper towels.
Dust generously with powdered sugar.
Serve immediately while hot and crispy.
“Get the oil to a steady 375 before any batter goes in. Too cool and the funnel cake drinks up grease and turns heavy instead of lacy and crisp.”
